Mexican Rice

Ingredients

2 cupsLong grain rice
1/8 cupVegetable oil
3 ozTomato paste
8 ozTomato sauce
2-3Garlic cloves
4 cupsWater
1 tspSalt
1/4 tspBlack pepper
1 tbspChicken bouillon
1/4 tspCumin powder
1/4 tspGarlic powder

Directions

  1. Heat oil in a large pan that has a lid on medium heat (about 40% flame).
  2. Add rice to the pan and lightly brown the rice, continuously stirring.
  3. Add the garlic until fragrant.
  4. Stir in tomato paste and cook for 2 min.
  5. Stir in remaining ingredients, being careful when adding liquids as it will stem.
  6. Bring to a boil.
  7. Cover with lid and lower to a simmer for 30 to 40 minutes.
  8. Fluff rice, mixing all the deliciousness that remained on the top of the rice
